Grilled sea bass
Another simple Summer recipe with fish.
I bought a sea bass from the fishmonger’s. Usually they come in various sizes with different prices for farmed fish, fish caught with nets or with lines. The last are the best and most expensive.
I only needed one fish for two people and the line-fish were too large.
The fishmonger wanted to clean the fish but I declined. I prefer to clean it myself with just a small cut while I keep the scales on for better grilling.
I did cut off the fins.

Steps
- Wash the bass, make a small incision in the belly and gut the bass.
- With scissors, cut the fins.
- Put the fish in a special wire rack.
- Grill on high heat for 25 to 30 minutes, turn every five minutes and place the fish in such a way on the heat that it cooks all over.
- Present.
